Curried Sweet Potato Latkes

Celebrate Hanukkah with Curried Sweet Potato Latkes!

If you haven’t ever tried a sweet potato latke this is definitely the one to try. And they’re great even when it’s not Hanukkah. The sweetness from the potatoes combined with the rich curry flavor blend together into something memorable. With these flavorful latkes, you can go crazy with toppings, too. Anything from yogurt based to thick chutney will make these treats even more D-lish.

Prep time: 20 min

Cook time: ½ hour or (or whenever they let you out of the kitchen!)

makes 16 3″ latkes

1 pound sweet potatoes, peeled

½ cup whole wheat flour

2 tsp turbinado sugar

1 tsp baking powder

¼- ½ tsp cayenne powder

2 tsp. curry powder

1 tsp cumin

1 tsp Salt and pepper to taste

2 large eggs, beaten

½ cup milk (I use soy milk)

Peanut oil for frying

  1. Grate the sweet potatoes coarsely. In a separate bowl mix the flour, sugar, baking powder, curry powder, cumin, salt, and pepper.
  2. Add eggs and milk to the dry ingredients to make a stiff batter. Add the potatoes. Batter should be moist; if too stiff, add more milk.
  3. Heat ¼ inch of peanut oil in a frying pan until very hot –not smoking. Drop tablespoon of batter into oil and fry over medium heat. Fry on both sides until golden. Drain on paper towels and serve hot.
