This light dish is perfect for those wonderful summer days ahead!

Ingredients
2 pounds green beans, ends trimmed
1 tbsp rice vinegar
2 tbsp toasted sesame oil
1-2 tbsp soy sauce
1 tbsp minced fresh ginger
2 tsp toasted sesame seeds
1 tsp minced garlic
1 tsp honey
1/2 cup thinly slice red onion
1½ cup fresh bean sprouts
Additions: add steamed broccoli, toasted cashews, or toasted slivered almonds
Directions
- In a 6-quart pan over high heat, bring 1 quart water to a boil. Add beans to steamer insert and cook until tender-crisp to bite, 3-5 minutes. Drain, immerse in ice water until water until cool, and drain again.

In a serving bowl, mix vinegar, sesame oil, soy sauce to taste, ginger, sesame seeds, garlic and honey.
3. Add green beans, onion, and bean sprouts and stir gently to coat. Serve at room temperature, or chill airtight up to 3 hours, and serve cold.
