This is a simple, yet so very delicious way to enjoy beautiful broccoli. This recipe is adapted from my favorite vegetarian cookbook, The Passionate Vegetarian, by Crescent Dragonwagon.
And yes, this broccoli dish is as wonderful as her name! Don’t you love it?!
And, just in case I have bragging rights, the broccoli in this picture was grown in my garden.
Prep time: 15 minutes
Cook time: 25 minutes
1 head of broccoli, cut into florets, and steamed
1/4 cup olive oil or butter
3-5 cloves garlic, peeled, and chopped
1/3 cup walnuts, chopped into little bits
Sea salt to taste if desired
- Heat the oil or butter in a small skillet over medium-high heat. Add the garlic and cook, stirring constantly, until garlic is golden brown.
- Add the walnuts and cook, stirring constantly, until the walnuts also brown just a little infusing nicely with the garlic oil, about 2 minutes.
- Pour the hot garlic walnut sauce and pinch of sea salt over the steamed broccoli, adding more oil if needed.
