Ingredients:
4 tablespoons olive oil or butter
1 ½ large onion, chopped
2 pound broccoli, separate florets, chop stems (remove tough outer layer)
3 cloves garlic
1 tsp. fresh tarragon, chopped, or ½ tsp. dried
½ cup white wine
5 cups veggie stock
1 cup cream or soy milk
Directions:
- Melt butter or heat oil in deep saucepan or kettle over medium-high heat
- Add onion and broccoli stems and sauté until onion is translucent, 6 minutes or so
- Add wine, garlic, tarragon, salt and pepper and cook another minute
- Add stock, broccoli florets, bring to a boil then reduce to simmer
- Cook until broccoli is tender, 10 minutes
- Add cream if desired and blend/puree with immersion blender or other device
Additions:
Pre-heat broiler. Dived soup into ovenproof bowls and sprinkle each bowl with 1/3 cup grated cheddar cheese. Broil until cheese melts and bubbles around edges, about 4 minutes.
