Oranges along with other members of the citrus family are in season right now, so make the best of using this versatile family that is packed with antioxidants like –everyone knows- vitamin C – in your winter dishes and dressings. Along with the juicy pulp part, there is hidden health treat contained within the orange that is the white pithy matter which is really where the phytonutrient flavonoids live. To maximize your nutrient intake make sure to nibble on this slightly bittersweet inner layer. My father in-law at 82, bless him, blends the WHOLE orange into smoothies. Now that is a real dedication to health. This tasty and healthy dressing favors the juicy sections of the orange along with other power packed foods like tahini made from the minnie mighty sesame seed. Enjoy over salads, grains, root vegetables and greens.

Makes 1 cup

Prep Time: 15 minutes

Ingredients:

2 teaspoons tahini (sesame paste)

1 tablespoon fresh squeezed lemon juice

2 tablespoon balsamic vinegar

½ cup water

1 medium orange, peeled, sectioned and seeded

½ teaspoon dry mustard

2 teaspoon honey, or to taste

salt and pepper to taste

a pinch of ground cumin

Place all ingredients in a blender of food processor and puree until smooth.
