Happy Summer!  I want to share my absolute favorite summer salad with you. It is the perfect combination of savory, sweet, crunchy and is so refreshing on a hot day. 

The benefits of eating watermelon include… improved blood pressure, stronger kidney function, healthier immune system, better bones, improved alkalinity while being good for the heart. 

Watermelon and Arugula Salad

Ingredients:

6 cups arugula

6 cups watermelon, cut into 1-inch cubes

½ red onion, thinly sliced

1/3 cup olive oil

¼ cup balsamic vinegar

2 teaspoons honey

1 teaspoon sea salt

Fresh ground black pepper

1 cup feta cheese crumbles

 

Directions:

Put the arugula, watermelon, and onion together in a bowl.

Dressing: In a separate bowl, whisk together oil, vinegar, honey, salt, and pepper.

Drizzle the dressing over the salad and toss gently until coated.

Add feta crumbles and serve.
