Watermelon and Arugula Salad
Ingredients:
6 cups arugula
6 cups watermelon, cut into 1-inch cubes
½ red onion, thinly sliced
1/3 cup olive oil
¼ cup balsamic vinegar
2 teaspoons honey
1 teaspoon sea salt
Fresh ground black pepper
1 cup feta cheese crumbles
Directions:
Put the arugula, watermelon, and onion together in a bowl.
Dressing: In a separate bowl, whisk together oil, vinegar, honey, salt, and pepper.
Drizzle the dressing over the salad and toss gently until coated.
Add feta crumbles and serve.
